    The XHP-PFN-1500 Falling Number Instrument is primarily used to detect germination damage by measuring the α-amylase activity in flour, thereby ensuring the quality of grains and flour. It is an essential quality control instrument in fields such as grain storage and flour processing. α-amylase is an enzyme produced during the germination of grains; when wheat flour is mixed with water, this enzyme degrades the starch granules, directly impacting the final quality of flour-based products such as bread, biscuits, and steamed buns.

    The instrument operates by measuring the time required for a stirring rod to fall freely from the top of a suspension to a specified distance. This measurement quantitatively reflects the viscosity of the suspension, thereby enabling the determination of α-amylase activity. Furthermore, it can quantitatively assess α-amylase activity by measuring the viscosity of a flour suspension while it is being heated in a water bath. When a suspension—formed by uniformly mixing a flour sample with water—is placed in a water bath and heated, the starch begins to gelatinize, resulting in an increase in viscosity. Suitable for use with grains such as wheat and wheat flour, this instrument is an indispensable tool for quality control in the sectors of grain storage and flour processing.
