XHP-PG-2850·Gluten Tester

The XHP-PG-2850 gluten analyzer is a professional instrument used to determine the dry and wet gluten content and quality of flour. It is suitable for measuring the gluten content of wheat flour, hard wheat, coarse wheat, and cereal flour. The quantity and quality of gluten in flour have a significant impact on the quality of bread, biscuits, noodles, and other products. For example, the higher the wet gluten content, the larger the volume of the baked bread. Although gluten is composed of protein, the protein content in flour does not accurately reflect the quality of the gluten; in many cases, wheat with high protein content has a very low gluten content. The gluten analyzer objectively and accurately evaluates dough characteristics by measuring the quantity and strength of gluten formed after kneading dough. It is an internationally recognized standard instrument for testing gluten quality.

The gluten analyzer automatically completes the entire preparation process from flour to dough to wet gluten. The wet gluten is then further separated using a sieve in a centrifuge, allowing for the determination of wet gluten content and the gluten index, which reflects gluten characteristics. Drying the wet gluten in a dryer further yields the dry gluten content and the water-holding capacity of the wet gluten. This instrument is simple to operate, easy to use, and has high measurement accuracy. It is suitable for agricultural breeding, commodity inspection, grain storage, grain trade, flour processing, food production, etc.
